Advanced Cooking – Day 13

October 11, 2016

A new day and my morning was early; I woke at 5:45 to get to the kitchen at 6:30 and get a head start on prep . We created an updated prep list and filled it out for today to give us a guideline as to how much ingredient we needed for the next two weeks. After a rough start at prepping, I decided it was my turn to cut myself… (ugh), mandolins are very unforgiving. So I had a hurt thumb to work with. Prep didn’t go too bad, but we were one person short today which put pressure on everybody because there was so much to do; I knew that the new menu would be popular this week.

Lunch went okay. I am finding it a little weird to talk so much while I am cooking. I don’t normally talk to other people while I am cooking unless I am asking them where their half of the food is; Cafe Olga is definitely different than the kitchen here at school. They are both fast paced, but here you have to pay special attention to the way you are cooking and plating the food because you are most likely working with either expensive ingredients that you don’t want to mess up, or many components. I am getting the hang of it now, and I really thank Chef Gil for helping me and Colin through the whole process because it is all still a learning process, the aces and mistakes, and will be for a while.

I actually had time to take a couple of pictures today which was great. The ones I took turned out really great:

I got some compliments today on my cooking, and it is so funny how I partially think people are joking when they say that. But I shouldn’t think that because they wouldn’t say it if they didn’t mean it. Everyday will get easier but harder as I learn more about the world of food…
